These wiggly Pumpkin Jigglers are a staple in our house this time of year. They are loaded with the goodness of pumpkin, coconut milk and gelatin. They make a great help-yourself-to-the-fridge snack and pack well in the boys’ lunches. The boys get extra giddy when I make them in fun molds like these skull and cross bones! A fun and healthy Halloween treat for sure!

Ingredients
- 1 (14 oz) can full fat coconut milk
- One empty coconut can of water
- 1 (15 oz) can pumpkin
- 1/4 cup gelatin
- 1/2 cup coconut sugar or 1/3 cup brown sugar
- 25 drops Vanilla NuStevia or other liquid stevia extract
- 1 teaspoon pumpkin pie spice
- 1/8 teaspoon salt
- 1/2 teaspoon pure vanilla extract
Instructions
- Combine milk and water in a saucepan. Slowly sprinkle gelatin over surface of liquid mixture and allow it to absorb water before sprinkling more on (this is critical to properly bloom the gelatin and prevent clumping).
- Bring to boil then reduce to low simmer and cook for 2 minutes.
- Whisk in remaining ingredients and heat through.
- Pour into 9×9-inch squared dish or molds of choice. Chill until set.
Notes
This recipe offers “just enough sweet.” Adjust sweetness to your liking with more stevia or more sugar.
